Rainbow Cheesecake Version 2.0

The new and improved Rainbow Cheesecake!




It looks way better than my first attempt, doesn't it?

If you are keen on making one of your own, here's the recipe:

Cake mix:
16 ounces cream cheese, room temperature
1/2 cup castor sugar
2 tsp vanilla extract
2 large eggs
1/4 cup sour cream
food coloring

Cake crust:
50g melted butter
Ten or so digestive biscuits, to your taste

Preheat oven to 325 degrees.
Mash digestive cookies until fine. Mix with butter, smooth and press the digestive mix onto the base of your pan. Chuck it in the freezer till you need it again.
In a large bowl, beat cream cheese, sugar, vanilla extract until smooth. Beat in eggs one at a time, then add in sour cream.
Divide mixture into 6 (or however many colors you'd like) small bowls and add a different color to each one. Drizzle batters onto digestive biscuits base in the 9-inch springform pan. (or a disposable aluminium foil one if you don't have a springform pan)
Bake 35 minutes, until the center is just about set when you jiggle the pan.
Allow to cool completely and refrigerate before serving.
Run a knife around the cake to release it before removing sides of pan.

I'm pretty proud of myself, considering that I am quite a noob in the kitchen.

My maid says it looks like a painting, and she thinks she sees things in the cake.


Like this yellow swan/duck thing. She was peering at it very intently. I guess if you looked hard enough you'll start to see Jesus.

Went to RJ's open house today after a very dreary games festival intended for destress after the exams. Was brought around by YK's friend, Wongli. Ha, interesting experience.

I guess it's alway handy to have connections. I have fearfully few connections, though.
